I eat sprouted potatoes all the time. Flick the sprouts off, cook em, eat em.

Sprouted potatoes are OK to eat. Most of the ones that we eat here have already started to sprout. Never a problem. The thing to avoid is green areas. Those are areas that have been exposed to the sun. Cut them off and eat the rest.
ReplyDeleteWe use to eat sprouted spuds all the time, never had any problems. Just don't mind the facial ticks I have, they will eventually subside... We ate them and just cut out the green and any brown spots, cooked them up. If we didn't eat them we went a little hungry. Mom use to cut a bit of the spud around a sprout and use that as a starter plant and grow more potatoes.

ReplyDeletePotatoes that sprout have not been treated with an application on sprout inhibitor which slows down the aging process as well as moisture loss.
Green potatoes have been exposed to sunlight or artificial light such as fluorescent lamps. Some varieties with dark skin mask the green. When choosing potatoes that are out in the light
use your fingernail to prick a bit of skin and the green will pop out. Sprouted potatoes are perfectly fine to eat while green ones tend to have a bitter flavor which in excess may make you sick
